Yummy Coconuts

Where did this week go??? Hope you are all enjoying your long weekend! Not I, since it is cold and crappy here, plus I have to work. Yesterday on the FIT CHICKS Facebook page, we were talking about fabulous coconuts. My faves are the young thai coconuts – they are the ones that aren’t hairy, they are white and pointy. You can find them in Asian supermarkets, but I usually just buy them at Superstore. They are delish – the water is full of electrolytes and nutrients and tastes super yummy on its own, or as a base for smoothies. The “meat” is soft and so good! I usually end up scooping it out with a spoon, but it can be used in a variety of recipes.

It can be a little intimidating opening up this lovely fruit. Check out this link here for a how-to video. I was a little scared at first, but practise makes perfect!

One of my fave things to make with coconut meat is raw chocolate coconut pudding. It’s totally vegan and tastes fabulous! This makes one good serving (or two small if you want to share!)

the meat of 1 young coconut

1/4 cup of coconut water (add a little at a time since the texture of the meat can be different from coconut to coconut)

a few tablespoons of cocoa powder

a dash of vanilla

a touch of agave nectar or maple syrup or stevia to sweeten a little

Blend until thick, scraping down the sides as needed. Refrigerate for an hour or so and enjoy!

Note – if you open up a coconut and the meat or water is pink, it’s gone bad and don’t eat it. Keep your receipts and don’t be afraid to take it back to the store for a new one!
