Easy Veggies for Busy Chicks

One of the biggest excuses people have for not getting in their fruits and veggies is lack of time. It’s just way easier to grab a box of packaged crap than to grab some veggies. Here are a few easy ideas that I use to make sure I keep my produce intake up:

Buy bags of frozen fruit (the 4 berry mix is my fave!) – this makes it easy to throw into smoothies, defrost overnight and add to oatmeal at breakfast, or just stir into some plain yogurt for a quick yummy snack!

Have a veggie prep day – carve out a half hour on the weekend to chop up all your veggies – bell peppers, mushrooms, onions…..keep them in individual containers and when you are making an omelet or stirfry you can just toss some in. Or if you need a quick snack they are ready to go!

Buy pre-cut veggies. They cost a little more, but it’s well worth the convenience. At Costco I buy big bags of precut broccoli which are super easy to throw in the steamer, precut celery for a quick snack, grape tomatoes that are easy to pop into your mouth and of course baby carrots.

Buy pre-washed salad greens and spinach. Prepping a salad is a snap when you don’t have to wash and spin the greens. Who has time for that?

Always keep your fruit bowl full of apples, bananas and oranges so they are easy to grab when hunger hits.
