Hey Chicks!
I am by no means a vegetarian, but I am moving towards a more plant based diet. Plant foods are not only lower in fats and higher in nutrients and fibre, but they are also better for the environment and cheaper too! A can of beans (which I can make a meal for my family out of) is less than a buck, where as 4 chicken breasts is almost 10 dollars! (at least they are out here!)
So this week, try to replace two of your dinners with meatless entrees. One easy thing I do is make my regular Shepherd’s Pie recipe, but I throw in a can of lentils instead of ground beef. I also make a lot of stir fries with tofu as the protein source(buy the pre-pressed for added convenience, but make sure it’s organic!) And portabello mushrooms marinated in balsamic vinegar and grilled make a great burger patty! (I like mine topped with roasted red peppers and goat cheese.)
