Chick Feed: “Secret Ingredient” Cookies – dairy free, gluten free, vegan recipe

I sent this email out a while ago and after seeing a ton of our FIT CHICKS Academy students raving about them in our private Facebook page. I love baking and I always try to make it as nutritionally dense as possible even for the sweet treats.

Why? Because our bodies need good quality fuel not only to naturally rebalance and lose weight, but to give us energy, fight disease, build muscle, help with anxiety and depression, and so much more.

It ALL loops back to what we put in our mouths every day so why not have your energy packed cookie and eat it too 🙂

I was going to a dinner party with a friend of mine is gluten intolerant but also follows a grain free diet (grains can cause huge inflammatory responses in the body that can lead to a host of issues including arthritis flare ups, weight gain, digestive issues), so I had to come up with a still super delicious cookie BUT that did not contain any grains or gluten.

And I knew what I was pulling out of the cupboard right away!

It is one of my FAVE baking ingredients as it is super high in protein, high in fibre, grain free, mild in flavour and most peeps never know it is there….can you guess what it is?

BEANS!!! Yes these cookies are made almost entirely of white beans!

I brought them to the party, didn’t tell anyone (even the host didn’t now) and they were a hit. You have to try these… I promise you will NOT regret it 🙂

WHITE BEAN CHOCOLATE CHIP COOKIES

1 Can of Navy beans (drained, rinsed and let sit til dry)
1/3 cup of sunflower seed butter
1/3 cup of monk fruit (I like Lakanto brand. This is a zero calorie all natural sweetener that looks like sugar but has zero impact on blood sugar. You can also add 1/3 cup of honey)
1.5 Tbsp of organic vanilla extract
1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup Enjoy Life chocolate chips or 80% dark chocolate in chunks

Directions:
Preheat oven to 375 degrees. Put all ingredients except chocolate into food processor. Blend til smooth. Stir in chocolate chips. Using a tablespoon, place cookie dough balls on greased baking sheet. Bake for 18 – 22 min. Let cool and enjoy! This should make about 12- 16 cookies, If you want to learn more about vegan options, check this plant based recipes review.

These are also AMAZING for a pre workout snack and for kids lunches as they are peanut free!
