CHICK FEED: Cozy, Comfy Creamy Mashed “Faux”tatoes (dairy free, paleo friendly)

Hey Chicks,

Between the recent deep freeze, snow and lots of dreary rain, it has left me craving some serious comfort food.  And what is more comforting than delicious mashed potatoes! Only prob is,  we want to avoid the white stuff and lots of starch that mash includes so we had to give it a FIT CHICKS Makeover.

Do the FIT CHICKS Mash!

CHICK FEED:  Comfy, Creamy Mashed “Faux” tatoes

INGREDIENTS

  • 1 Cauliflower, chopped in florets
  • 3 cloves of garlic
  • 2 shallots, peeled and chopped in haalf
  • 1 tbsp of extra virgin olive oil
  • 1 tbsp Fresh Parsley
  • salt & pepper to taste

DIRECTIONS

  • Chop cauliflower, garlic and shallots
  • Fill a large pot with about 1.5 inches of water and insert steamer basket.  Once the water is boiling, add cauliflower, garlic and shallots to steamer basket.
  • Reduce the heat to simmer and cover for approx 5 – 7 min or until tender when pierced with a fork.
  • Chick Tip: For thicker mash, remove cauliflower and place into a clean tea towel to cool.  Once cool, squeeze and drain out all the water then add to blender.
  • Add cauliflower mix, olive oil, chopped parsley and salt & pep in blender.  Blend until desired consistency. This is where you start to play with the consistency (ie more olive oil for creamier, adjust salt & pep)
  • Serve immediately or store for up to 4 days in the fridge

CHICK TIPS:

Cauliflower is one of our fave veggies to sub for potatoes! Here are some extra ideas to make your veggies even more chickeriffic:

  1. Use this mash as a topping for Shepher’s Pie, as a side to Sunday dinner or just on its own!
  2. Want it thicker? Add a little bit of Arrowroot flour (it’s gluten free) to thicken it up.  If drained, you should be ok 🙂
  3. Get more veggies in! Do a combo of white veggies such as cauliflower / parsnip mash for a sweet take, cauliflower / celery root for a milder flavour or cauliflower / potatoe if introducing to die hard tater fans…they won’t notice the difference:)

The possibilities are endless chicks but just remember the Livin’ la Vida FIT CHICK Principle and try to focus on eating REAL, WHOLE foods made with LOVE (ditch those packages!)
