We are getting ready to run our last boot camp class of 2012 (don’t worry, we will be back ready to rock on Jan 7th for a fierce New Year and we have our $50 off promo!) and holiday celebrations are in full swing – woot woot!
At holiday parties, I love any type of antipasto plates. Olives, pesto, veggies, roasted red peppers or garlic, goat cheese…so many different and creative ways you can create these plates to your personal tastes. Plus you don’t over eat! As I don’t really eat a lot of grains, the one thing I always struggle with is what the heck to eat all of these goodies on! With breads and most crackers out of the picture, I had to come up with an alternate solution….introducing the Super Fab Sunflower Seed Cracker Recipe!
These homemade crackers are SO DELICIOUS (I like to call them crispy, crunchy goodness) that I can almost promise you will like them better than store bought! Plus, they are gluten free, grain free and paleo friendly.
For my vegan chicks, just swap out the egg for a “chia egg” to bind (1 tbsp chia seed soaked in 3 tbsp water)
CHICK FEED: Super Fab Sunflower Seed Cracker Recipe
1 1/4 cups raw sunflower seeds
1/4 cup of sesame seeds
1/4 cup sunflower seed butter (you can sub tahini or cashew butter too)
1 egg (or chia egg for my vegan chicks!)
3/4 tsp rosemary
1/2 tsp parsley
1/2 tsp garlic powder
1/2 tsp sea salt plus more to sprinkle on top
DIRECTIONS
1. In a food processor, pulse the sunflower seeds into a fine meal
2. Add the sesame seeds, sunflower seed butter, egg and all seasonings and pulse until well combined
3. Dough will clump together and create one big ball
4. Place dough on a piece of parchment paper with another piece of parchment place over the top
5. Use a rolling pin to roll the dough out between an 1/8 and 1/4 inch thick
6. Slice with a sharp knife into desired size crackers
7. Place the bottom piece of parchment paper with dough onto a cookie sheet
8. Bake at 350 for 8- 10 min minutes. Flip the crackers. Then bake for another 2- 5 minutes until brown.
9. Sprinkle with a little sea salt as soon as crackers come out of oven
CHICK TIPS FOR EVEN MORE FAB CRACKERS!
Here a few tips that may be helpful as you make your crackers:
- No rolling pin? I did not have one so I used a wine bottle..worked like a charm!
- Play with your flavours! These crackers can be made savory or sweet. Add cranberries, sliced nuts, basil, thyme, chili flakes…the possibilities are endless
- Avoid thin edges. The edges of your crackers may brown faster than the rest as they are thinner. I find if you try not to roll too thin and flip then rearrange at about 8 min that you can salvage those edges 🙂
- Serve with yummy dips! One of my fave is always fresh salsa like our Simple Sassy Salsa or Marvelous Mango Salsa
