WELLNESS WEDNESDAY – Coffee creamer recipe (dairy free, paleo friendly, no sugar added!)

I am still in super “go” mode. I just spent all weekend at the Can Fit Pro Conference in Toronto (where Amanda and I got to meet fellow bootcamp lover Tommy Europe from “The Last 10 lbs” Bootcamp and clean eating sista friend Tosca Reno).

Now have jumped into a busy week as my I am about to be in my 3rd wedding of the year in Guelph for my gorgeous friend Nadine before heading for a camping / hiking getaway in Jasper, AB for long weekend. We have a week off bootcamps coming up (no classes from Aug 27-31 except Newmarket) before we launch our next session starting Sept 4th, but even then I have guests, we are running charity classes to raise $$ for Team FIT CHICKS CIBC “Run for the Cure” and finalizing details for our TV Series launch on Sept 11th of ‘Shape Up with FIT CHICKS” on Rogers TV. I am a busy chick!

Even tough blurry, Tosca is an amazing example of how healthy eating and exercise keeps you fierce after 50...she looks amazing!

Now will all of this exciting stuff going on, I am on the run A LOT but there is one thing I do not go a day without…and that is coffee. I am a self proclaimed coffee junkie. Not even for the caffeine but the taste! I limit myself to 2 a day but if left to my own vices, I could probably drink about 20 cups (terrible, I know!).

 

That said, I wanted to share an amazing coffee creamer recipe that I came across on a blog I like called “Deliciously Organic“. Even though I always try to promote not drinking your calories, this is a super tasty, dairy free, paleo friendly and no sugar added homemade option if you want to give your coffee a little pizzazz one and a while. Instead of cow’s milk, the base is coconut milk (it is one of the only non dairy milk that is creamy enough and will not curdle in coffee like soy). If you don’t like it as creamy, Carrie also recommends thinning it out by adding a little almond milk but I have not tried this yet.

Mason jars work best for storage but I prefer the flip lid. Less mess!

I tried making the cinnamon streusal coffee creamer and it turned out really yummy! I made a few substitutes as I did not have almond extract and used stevia instead of the date paste.

CINNAMON STREUSAL HOMEMADE COFFEE CREAMER RECIPE

Ingrediants

1 cup of coconut milk (recommended Thai Kitchen Coconut Milk but any will do)
1/4 cup plus 2 tbsp of date paste ( I subbed for stevia added to taste when the coffee was made)
3/4 tsp of ground cinnamon
1 tsp of vanilla extract
1 tsp of almond extract (I left this out but still was delish!)

DIRECTIONS

1. Whisk all ingrediants in a bowl
2. Strain through a fine mesh metal sieve to get any chunks out
3. Store in a glass jar for up to one week

Next I am going to try the Pumpkin Spice Coffee Creamer but just play around to find something that works for you!
