Blueberry Vanilla Protein Ice Cream

 

Hey Chicks!

I am a total ice cream lover – but with a pint of haagen-dazs weighing in at 1200 calories, it’s not something I have very often. And I admit it – I am not one who is satisfied with a tine 1/4 cup of ice cream!

Protein ice cream is great – it’s like a frozen protein shake – so it’s not even an indulgence! I have experimented with a bunch of flavours, but this is one of my faves! Note – you will need a high powered blender for this, like a Vitamix.

Top with some fresh bluebs - delish!

Ingredients (serves 1):

  • 1/2 scoop vanilla protein powder
  • 1 cup unsweetened almond milk
  • 1/2 cup fresh blueberries (or frozen, just reduce the amount of ice if necessary)
  • about a cup of ice (for creamier ice cream, make almond milk ice cubes)
  • 1 vanilla bean (you can totally use vanilla extract, but these were cheap at Costco!)
  • 1/4 tsp xanthan gum, 1/2 tsp guar gum (again, optional, but they make a HUGE difference in the creaminess and texture of your ice cream.)

Throw everything in the vitamix and tamper away until you get that creamy goodness!

Feel free to experiment with different fruits, flavour and mixin’s. And since the ice cream is so healthy, you can add in some chocolate or candy guilt-free!
