Last week, Head Chick Laura had a great post this week about substitutions for processed carbs. She talked about cauliflower rice, which is fabulous. So we thought we’d give you a fab “one pot” recipe using cauliflower rice.
Here’s how to make the basic “rice” – take out your food processor and put the grating blade in it. If you don’t have one, you can grate it with a cheese grater but it is a little finicky. Take a bunch of cauli florets. Process them and they will get a “rice like” consistency.
Now that you have your “rice” you can do a lot with it. It only needs to be sauteed in a pan with a little oil to warm it up, then you can use it as a base for curries and sauces, or add whatever mixins you like for a side dish. Here’s an easy one to get you started:
Curried Cauliflower Rice
- First you make your rice and set aside. In a pan, saute one pound of chicken breast in a little coconut oil. Add in your fave veggies (I used peppers, zucchini, onions and mushrooms). Saute until chicken is cooked.
- Then add half a can of coconut milk and a few tbsps of curry paste and a bit of s&p to taste and a 1/2 cup of pineapple chunks if desired.
- Put the “rice” in at the end and just heat it through, otherwise it will become mushy. Make sure it’s hot, and serve!
