September is already in full swing and it has been an awesome month so far. Lovin’ our new chicks this session even though I was sad to miss class on Thursday as I had an upset tummy but the fab Amanda (who is your other Head Chick) subbed my class so I knew I had left my chicks in good hands.
This weekend so far has been alot of catch up. I have spend most of today getting caught up on email and prepping for the launch of our first ever 28 Day pedometer challenge on Monday. I am so super pumped about it! But am about to shut down the work brain for eats and treats with my peeps. I am heading to a friends and we are each responsible for bringing some snacks so I am bringing garlic (k, don’t turn up your nose yet – read on!)
I have been addicted lately to roasted garlic. I can’t get enough of it! When you roast garlic it, it takes aways alot of the strong flavours but you still get a softer, sweeter garlicky flavour that you can just spread right on breads, mash in potatoes or cauliflower (lower carb option), add to whole grain / brown rice pasta, make a salad dressing by blending with olive oil or just serve on an antipasto plate still intact. It will make you look super fancy but it is the most easiest thing to do.

HOW TO MAKE ROAST GARLIC – Chick Style!
1. Heat your oven to 400 degrees
2. Peel away the outer layers of the garlic bulb skin but leave the skins on the individual cloves. Cut the tip off the entire head of the garlic. (About 1/4 inch but you want to keep the garlic’s shape)
3. Place on a piece of aluminum foil and drizzle the garlic with olive oil. You can also sprinkle with sea salt and fresh ground pepper.
4. Wrap the aluminum foil. Leave a hole open at the top to let the steam escape.
5. Bake for about 30-35 min or until the garlic is soft.
6. Squeeze out the cloves to add to recipes or just place on a plate as is for your guests to enjoy.
BONUS – Garlic is a SUPER FOOD! It helps prevent cancer, lowers blood pressure and helps prevent weight gain.
CHICK TIP – Serve roasted garlic on fresh baked whole grain ciabatta at your next brunch with omelettes or instead of garlic bread at dinner. Garlic butter has 110 calories per tbsp and roasted garlic only has 9 cals in 2 cloves! You will still get all the yummy flavour without the artery clogging fat.
So for tonight, I am bringing my garlic, some french cheese I can not pronounce, sundried tomatoes and whole grain ciabatta. Such a domestic diva, I am!
