It’s been a while – the weeks go by so fast! Almost holiday season again – aaaaahhhhh!
I adore miso soup and last week when I was at the Asian supermarket I picked up some instant miso. Bad idea! It was loaded with MSG and chemicals, and gave me the worse headache ever!
The instant miso soup was basically a package containing a paste, and then bits of dehydrated seaweed and onions to sprinkle on top. It gave me an idea to make my own instant miso. It was WAY better and SO much cheaper. It’s a fab low cal and filling snack (only about 50 cals for a big cup!) I’ve been eating it every day since!
Here’s how I make it – Put a tablespoon or so of miso in a cup (more or less to taste!) Bring the kettle to a boil, then leave it for a couple of minutes (miso shouldn’t be boiled). Stir in some pieces of dry seaweed (I used dulse, a big package was about a dollar and I cut it up with scissors!) and add some chopped green onions. Enjoy!
Other ideas are stirring in some tofu for a more complete meal, or using it as a base for any soup by adding your choice of protein or veggies.
